SMOKEY GRILLED PINEAPPLE SOUR
INGREDIENTS
2 oz (60 ml) Mezcal
2 oz Fresh Pineapple Juice,
2 oz Fresh Pineapple Juice,
1 oz 1933 Grilled Pineapple Simple Syrup,
1 oz Lemon Juice,
1 Slices of Pineapple (Needs to be Grilled)
1 Egg White,
Orange Bitters,
Crushed Ice,
1 Egg White,
Orange Bitters,
Crushed Ice,
Edible Flowers for Garnish
BAR TOOLS:
Cocktail Shaker,
Jigger,
Jigger,
Orrefors Avant-Garde Glass or Old-Fashion Glass,
Cocktail Strainer,
Lemon Squeezer,
INSTRUCTIONS
First, in a cocktail shaker add the grilled pineapple and muddle it together. Second, add ice and the egg white, shake briefly to aerate the egg whites. Third, add the Mezcal, Pineapple Juice, 1933 Grilled Pineapple Simple Syrup, lemon juice, and more ice, shake everything vigorously for 10-15 seconds until chilled. Add ice to an Orrefors Avant-Garde glass or an old-fashion glass and double strain the cocktail over it, add 3-4 drops of orange bitters to the top. Lastly, add an edible flower for garnish and enjoy.
